Pasta with Spicy Black Bean Sauce
1 medium onion, chopped
2 cloves garlic, minced
1 Tablespoon vegetable oil
1 15-ounce can black beans, drained and rinsed
1 16-ounce can tomatoes with Mexican seasonings
1/2 cup salsa
1 Tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon crushed oregano
4 cups hot, cooked orzo or rotini
Shredded Monterey Jack Cheese
Chopped fresh Cilantro
Cook onion and garlic in large skillet over medium-high heat until onion is tender. Stir in beans, tomatoes, salsa, chili powder, cumin, and oregano; bring to a boil. Reduce heat, cover and simmer 15 minutes, stirring occasionally.
Remove cover and cook over high heat until liquid is reduced to desired consistency. Serve bean mixture over pasta; sprinkle with cheese and cilantro.
Simple, easy, inexpensive with ingredients you probably have on hand already.
